Beaut way to use the ugliest spuds

A MARION Bay farming family has created a new range of value-added salads to use up 60 tonnes of potatoes deemed not pretty enough to sell.

But two big bins of potatoes are turfed out each day because of the way they look.

“It is a shame how wasteful we are and as a farmer it makes you cry,” said Mrs Daly, who went on a quest to eliminate waste and value-add to the crop.

With the help of Hobart food scientist Hazel MacTavish-West, she has developed a range of gourmet potato salads, sold at IGA and Woolworths.
