Single Origin, Cool Climate Dark Rum Batch 004
Fermented, distilled, matured and bottled on site at our distillery on the rugged and remote southeast coast of Tasmania. With only 115 bottles in our fourth rum release, this batch was barrel aged for just over 3 years, starting maturation in American oak and finishing in a Tokay cask. The overall character is golden with plenty of evolving complexity. First impressions on the nose are of fuji apple & cinnamon. A warming palate reveals candied honey and fresh fig, with subtle charred oak balancing the sweet tokay influence. The finish is clean and moreish with lasting pear and raisin.
