Place the strawberries, mint and simple syrup in a blender and blitz until really smooth.
Strain to remove the seeds and pour the mixture into ice cube moulds, then freeze.
In a blender, add strawberry ice cubes, watermelon and Sloe Gin.
Blend until smooth and slushy.
Spoon into glasses and garnish with extra mint leaves, if desired.
